Marshmallow Fondant

This is a super easy recipe and it actually tastes good enough to eat.
Ingredients:
1/4 c. butter
16 oz. mini marshmallows
4 Tablespoons of water
1 tsp. vanilla
2 lbs. powdered sugar, divided
Directions:
Put marshmallows in a microwave safe bowl and microwave on high 30 seconds to one minute to start melting the marshmallows. When the marshmallow are melted, stir in the water and vanilla until smooth. Beat in the powdered sugar one cup at a time, leaving one cup out. The dough will be stiff. Rub your hands with the butter and put fondant on a smooth surface to knead it. Use the remaining powdered sugar to work into the fondant you're kneading until it is no longer sticky and you can roll it in a ball that looks like this:
When it looks like a ball, wrap it tightly in seran wrap and put in the fridge overnight. The next morning, bring it out and let it get to room temperature. Roll it out on a surface dusted with powdered sugar. Enjoy.
