BBQ Chicken Quinoa Salad

Our Favorite Sugar Cookies
3 c. white sugar
4 eggs
2 tsp. vanilla
5 c. flour
2 tsp baking powder
1 tsp. salt
Cream together butter and sugar. Add eggs and vanilla. Mix in flour, baking powder and salt. Refrigerate at least an hour before you want to roll them out, or overnight. Roll out to 1/2 inch thick. Cut into shapes and bake for 6-8 minutes at 350 degrees. Don't over cook! These are the best.

Sue's Pumpkin Cake
1 2/3 c. sugar
1 c. oil
1 (16 oz) can of pumpkin
2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/4 tsp. ginger
1/4 tsp. cloves
Beat eggs, sugar, oil and pumpkin until light and fluffy. Combine dry ingredients and add to pumpkin mixture. Beat well. Pour batter into 9 x 13 pan and bake at 350 degrees for 45 minutes or until toothpick inserted in the middle comes out clean. You can bake as cupcakes as well. Cool completely and frost with cream cheese frosting.
Cream Cheese Frosting
1/2 c. butter softened
1/2 c. softened cream cheese
1 tsp. vanilla
2 cups powdered sugar
Beat butter, cream cheese and vanilla. Add the sugar and beat until smooth.

White Bread
Ingredients:
3 cups warm water
3 T active dry yeast
3 tsp salt
4 T oil
1/2 cup sugar
8 cups of flour (more or less)
Directions:
- In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.
- Gradually add about 4 cups flour, kneading until smooth. I use my Bosch mixer with the dough hook and let it for ten minutes mixing it up. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.
- Punch down the dough, let it rest a few minutes. Divide dough into three equal parts. Shape into loaves, and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

Ham and Pasta Skillet
- 1 pound small tube or shell pasta
- 3 tablespoons olive oil
- 1 tablespoon butter
- 3 cups fully cooked ham, diced
- 1 large sweet red pepper, diced
- 1/2 medium onion, chopped
- 1/4 cup minced fresh parsley
- 2 garlic cloves, minced
- 1/2 teaspoon dried basil
- 1/2 tsp dried oregano
- 1 1/2 cups chicken broth or chicken stock
- 1 T freshly squeezed lemon juice
- 3/4 cup shredded Parmesan cheese
- Cook pasta according to package directions – only cooking until al dente since pasta will continue to cook and soak up liquid when added to the skillet.
- While the pasta is cooking, in a large skillet, heat butter and olive oil over medium heat until butter is melted. Add pepper, onion, and garlic and cook until vegetables are tender, about 4-6 minutes. Add ham, basil and oregano and continue to cook, stirring occasionally, for another 2-3 minutes. Stir in broth (or stock) and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for about 10 minutes or until liquid is reduced by half (at first it looks like it will be way to “brothy” but never fear, if you are patient, it will reduce!).
- Stir drained pasta into ham and vegetable mixture. Add 1/2 cup parmesan cheese and toss. Sprinkle parsley and remaining parmesan cheese over the top of the pasta. Serve immediately.

Scalloped Potatoes
Picture coming soon, we love these potatoes! Best thing is no cream of whatever soup.
4 cups of thinly sliced potatoes
3 T butter
3 T flour
1 1/2 cups milk
1 tsp salt
1 cup of grated sharp cheddar cheese
1/2 grated cheddar cheese to sprinkle on top
salt and pepper
grated parmesan cheese to sprinkle on top
In a sauce pan melt the butter then stir in the flour. Add all of the milk, salt and pepper to taste. Cook it until thickened and bubbly, whisking constantly. Reduce heat and add a cup of cheese. Stir the sauce until all the cheese is completely melted. Line the bottom of a greased casserole dish with half of the potatoes. Sprinkle salt and pepper over it all to taste. Spread half of cheese sauce then repeat with potatoes, salt, pepper and cheese sauce. Sprinkle parmesan and cheddar over the top. Bake uncovered for about an hour at 350 degrees. If you want to bake this in a 9 x 13 casserole dish, you'll need to double it. This is for a smaller casserole dish as it is written.

My favorite vanilla Cupcakes
Makes 12
1 1/2 cups all purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 stick of butter at room temperature (8 Tablespoons)
1/2 cup sour cream
2 large eggs at room temperature
2 tsp vanilla extract
Preheat oven to 350 degrees. Line cupcake pan with liners or spray with cooking spray. Combine all dry ingredients. Add butter, sour cream, eggs and vanilla. Beat with electric mixer for about 30 seconds on medium speed until smooth and shiny. Divide batter in cupcake pan. Bake for about 20 minutes, but check on them. Let them cool. Enjoy!!
