Mom's Brownies

4 oz. unsweetened chocolate OR 3/4 c. cocoa and 4 T. butter
2/3 c. shortening
2 c. sugar
4 eggs
1 tsp. vanilla
1 1/4 c. flour
1 tsp. baking powder
1 tsp. salt

Grease pan. Melt chocolate and shortening. Mix everything else then spread into pan. Bake 30 minutes at 350 or until it pulls away from the sides.

Ham, Potato and Broccoli Casserole

1 1/2 c. diced potatoes
1/2 c. slightly steamed broccoli
1 c. diced ham
1 T. chopped onion
1/3 c. butter
3 T. flour
1 1/2 c. milk
1 c. shredded cheese
3/4 tsp. salt
dash pepper

Layer 9x13 pan with ham, potatoes, and broccoli. In a saucepan, melt butter and saute onions. Stir in flour to form paste. Add milk all at once to avoid lumps and stir until thick and bubbly. Add cheese and salt and pepper and stir until cheese melts. Pour cheese sauce over casserole and bake at 350 degrees for 45 minutes or until potatoes are cooked.

Mrs. Claus's Magical Cookies

This makes a lot of cookies.

1 1/2 cups white sugar
The giggle from an elf
2 cups of Brown sugar
found high on the shelf.
One pound of sweet butter,
A reindeer's shy wink,
Three eggs freshly chosen,
Fairy dust colored pink.
1 1/2 teaspoons Salt
A wish from a child,
1 1/2 teaspoon soda,
One griffin smile--wild.
6 cups of white flour
One gallon of Joy
The twinkle that's found
in a small girl or boy.
2 cups nuts if you like them
If not leave them out.
6 cups chocolate chips
Remove all signs of doubt.
2 tablespoons Vanilla
A huge dash of love,
A sprinkle of peace
From the wings of a dove.

Cream the butter and sugar ten minutes for sure,
Mix in giggles and winks, add the eggs and beat more.
Add salt, soda, flour, fairy dust and the wish.
The griffin's sweet smile and beat well--what a dish!
Add the chips and vanilla, and nuts if you will,
Scoop with small ice cream scooper and your cookies sheets fill.
Bake 350 degrees, 7 minutes til done,
Eat with love, joy and peace and have bundles of fun!

Ginger Bread Cookies

This recipe comes from the Scovil Bakery in Nauvoo, Illinois.

1 c. sugar
1 c. Molases
3/4 c. oil or shortening
1/2 c. hot water
Combine then add 2 eggs
Mix together the following:
1 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. ginger
6 or 7 c. white flour

Mix dry ingredients with sugar and molasses mixture. Refrigerate dough overnight. Roll out and cut with cookie cutter. Bake at 350 for 10 minutes.

Babe Ruth Bars

1 c. sugar
1 c. brown sugar
1 1/2 c. white karo syrup
Boil this one minute then stir in:
1 c. chunky peanut butter
7 c. corn flakes
Spread in a jelly roll pan and cover with Chocolate Chips. Melt in the oven for 2-3 minutes than spread the chocolate like frosting.

The Best Funeral Potatoes

8 medium russet potatoes
1 can cream of chicken soup
2 c. sour cream
2 c. sharp Cheddar cheese
1/2 c. Parmesan cheese
1 small onion chopped
1 (4 oz.) can green chilies, drained (optional)
salt and pepper
1/4 c. butter softened
Crushed Cornflakes

Scrub 8 medium russet potatoes and cover with water in large pot. Cover and cook just until done. Do not overcook as they will get too mushy. If desired, peel before dicing, although it's good with the peel on too. Cut into small cubes or grate on large grater. In a sauce pan, sautee onion in butter. Mix in soup, sour cream and cheeses and chilies. Put grated potatoes into a 9 x 13 and sprinkle salt and pepper over all of them. Pour the sauce over and mix well in the baking dish. Sprinkle crushed cornflakes over the top. Bake at 375 for about 45 minutes.

Pesto Enchiladas


3 chicken breasts, cooked
3 oz. cream cheese
1 T. milk
1 T. pesto
Mix above ingredients and fill tortillas. Combine the following and pour over the tortillas as well as a thin layer on the bottom too.
1 can cream of chicken soup
8 oz. sour cream
1 c. milk
2 T. pesto

Top with cheese, chopped Roma tomatoes and chopped cilantro. Bake at 350 for 30 minutes.
