Cut 1 small package wonton skins in 1/4" strips.
Separate and fry in hot oil. Drain well.
Cook and chop 3 chicken breasts.
Cut one head of lettuce into bite-sized pieces.
Prepare dressing:
1 can sliced water chestnuts
3 whole green onions, chopped
1/2 c. sesame seeds
4 T. sugar
1/2 tsp. salt
1/2 c. salad oil
8 tsp. rice vinegar
Toss salad with dressing and immediately before serving.

Ashlie's Spinach, Chicken, and Pasta Salad
This makes a huge salad. You could easily half it and it still makes a lot.
Dressing:
1 cup vegetable oil
2/3 cup bottled teriyaki sauce
2/3 cup white wine vinegar
6 T. sugar
1/2 t. salt
1/2 t. pepper
Salad:
16 oz. bowtie pasta cooked al dente
1 (10 oz.) bag fresh spinach
1 (6 oz) bag craisins
3 small cans mandarin oranges, drained
1/2 c. parsley
1 bunch green onion, chopped
1/4 c. sesame seeds, toasted
6 oz. honey roasted peanuts
2 c. cooked chicken, cut in small pieces
Cook the pasta. Blend dressing ingredients together. Mix dressing and cooked pasta in medium bowl and marinate for at least two hours. Combine the rest of salad ingredients in large salad bowl, add pasta and toss.

Gingerbread Cake
This is from the Lion House Restaurant
1/2 c. sugar
1/2 c. butter
1 egg well beaten
1 c. molasses
1/2 tsp. salt
2 1/2 c. flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. powdered cloves
1 c. very hot water
Cream butter and sugar, add eggs and molasses beat well. Add dry ingredients, add hot water and beat until smooth. Batter will be very thin. Pour into well greased 9 x 13 pan. Bake at 350 for 40 minutes.
When it comes out of the oven, poke holes in the cake and drizzle a glaze of 6 tablespoons lemon juice with 1 1/2 c. powdered sugar over the cake. Put whipped cream over the cake when it is cool. Very yummy holiday dessert.

Chicken Cordon Bleau
12 boneless, skinless chicken breasts
12 slices thin ham
12 slices Swiss cheese
12 slices cream cheese
2 eggs
bread crumbs
Parmesan cheese
1 can cream of chicken soup
1 pt. sour cream
1/2 c. canned milk
1/4 c. mayo
Pound chicken until it is flat. On each chicken breast, layer the ham, Swiss cheese, then cream cheese. Roll chicken breasts and secure with toothpick. Beat eggs in bowl and set aside. Season bread crumbs with garlic salt and Parmesan cheese. Roll chicken in eggs then dip in bread crumbs and arrange in a 9x13 inch baking dish. In another bowl, mix soup, sour cream, canned milk and mayo. Pour sauce over chicken, then cover and bake at 350 degrees for 1 1/2 hours. Serves 12.

Mom's Brownies
4 oz. unsweetened chocolate OR 3/4 c. cocoa and 4 T. butter
2/3 c. shortening
2 c. sugar
4 eggs
1 tsp. vanilla
1 1/4 c. flour
1 tsp. baking powder
1 tsp. salt
Grease pan. Melt chocolate and shortening. Mix everything else then spread into pan. Bake 30 minutes at 350 or until it pulls away from the sides.

Ham, Potato and Broccoli Casserole
1 1/2 c. diced potatoes
1/2 c. slightly steamed broccoli
1 c. diced ham
1 T. chopped onion
1/3 c. butter
3 T. flour
1 1/2 c. milk
1 c. shredded cheese
3/4 tsp. salt
dash pepper
Layer 9x13 pan with ham, potatoes, and broccoli. In a saucepan, melt butter and saute onions. Stir in flour to form paste. Add milk all at once to avoid lumps and stir until thick and bubbly. Add cheese and salt and pepper and stir until cheese melts. Pour cheese sauce over casserole and bake at 350 degrees for 45 minutes or until potatoes are cooked.

Mrs. Claus's Magical Cookies
This makes a lot of cookies.
1 1/2 cups white sugar
The giggle from an elf
2 cups of Brown sugar
found high on the shelf.
One pound of sweet butter,
A reindeer's shy wink,
Three eggs freshly chosen,
Fairy dust colored pink.
1 1/2 teaspoons Salt
A wish from a child,
1 1/2 teaspoon soda,
One griffin smile--wild.
6 cups of white flour
One gallon of Joy
The twinkle that's found
in a small girl or boy.
2 cups nuts if you like them
If not leave them out.
6 cups chocolate chips
Remove all signs of doubt.
2 tablespoons Vanilla
A huge dash of love,
A sprinkle of peace
From the wings of a dove.
Cream the butter and sugar ten minutes for sure,
Mix in giggles and winks, add the eggs and beat more.
Add salt, soda, flour, fairy dust and the wish.
The griffin's sweet smile and beat well--what a dish!
Add the chips and vanilla, and nuts if you will,
Scoop with small ice cream scooper and your cookies sheets fill.
Bake 350 degrees, 7 minutes til done,
Eat with love, joy and peace and have bundles of fun!
