4 boneless skinless chicken breasts
1/4 c. seasoned Italian bread crumbs (I just blend up croutons in my electric mixer)
1/2 c. parmesan cheese
1/2 tsp. garlic powder
1 T. parsley flakes
2 egg whites, beaten until frothy
Mix together bread crumbs, parmesan cheese, parsley and garlic. Stir until well blended. Dip chicken pieces into egg whites until coated. Roll chicken in crumb and cheese mixture. Pour 1 to 2 T of oil into fry pan. Cook chicken pieces until golden.
NOTE: I never fry them, I just put them in a baking dish and bake them at 350-375 for 35-45 minutes.
