Stacy's Bread Bowls



2 1/2 cups warm water
2 TBS yeast
2 TBS sugar
2 TBS oil
1 TBS salt
6 Cups of flour

Stir first five ingredients and add 3 cups flour until smooth. Add remaining flour. Stir only to moisten flour. Cover and set in warm place for 10 minutes. Punch down mixture. Let dough rise and punch down every 10 minutes for 1 hour.

Divide dough into 12 balls. Place on greased cookie sheet. Cover and let rise 30 minutes. Bake at 375 for 20 - 30 minutes, until lightly browned.
(personally I think that the 12 balls are really small, more like a cup of soup. I think it is more like 8 balls.)

Chrissy's Tortilla Soup

4 chicken breasts, sauteed
1 onion, diced, sauteed in butter
2 cloves garlic
1 (14oz) can stewed tomatoes
1 (14oz) can Mexican tomatoes
1 (4oz) can diced green chilis
1 (14oz) can chicken broth
1 (14oz) can water
2 cans beef broth
5 oz. roasted red pepper
1 tsp. salt
1 tsp. pepper
1/2 tsp. chili powder
1/2 tsp. cumin
2 tsp. Worcestershire sauce

Condiments

corn tortilla or chips
avocado slices
shredded jack cheese
sour cream
cilantro
lime wedges

Saute chicken, set aside. Saute onion and garlic until brown. Add rest of ingredients. Add juice of one lime and some of the cilantro. Puree and then add chicken. Simmer. Serve with condiments.

Curry Chicken Salad Croissants

Dressing:

½ c. Poppyseed dressing

½ c. mayo

½ tsp. curry

½ tsp. turmeric

Salad:

3? Chicken breasts

3 celery stalks

1 ½ apples

2 green onions

1 c. cashews

Kid Lovin' Chicken

My picky kids actually ate this and it was super duper easy to make.
Line a 9x13 pan with uncooked chicken tenders. Pour a dry package of stuffing mixing over the chicken. Drizzle with a stick of butter (or less if you're worried about calories). Bake at 350 for about thirty minutes covered so the stuffing gets soft, then uncover the last ten minutes. Enjoy!

Vanilla Yogurt Fruit Salad

  • 2 cups vanilla yogurt
  • 2 tablespoons good honey
  • 1/2 teaspoon pure vanilla extract
  • Seeds scraped from 1/2 vanilla bean, optional
  • 1/2 orange, juiced
  • 1 banana, sliced
  • 1/2 pint fresh blueberries
  • 1/2 pint fresh raspberries
  • 1 pint fresh strawberries, hulled and cut in half
  • 1 bunch seedless green grapes, halved

Directions

Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the orange juice and banana slices in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into serving bowls and top with the yogurt.

Tiffany's Florentine Chicken Ring


Ingredients:
Cooked and chopped chicken (if you are using canned chicken, I use two Costco cans or about 1 1/2-2 cups of cooked chopped chicken).
1/2 cup red bell pepper, chopped
1 (10 oz) pkg. frozen chopped spinach, thawed and well drained
1 cup grated cheddar cheese
1/3 c. mayonnaise
1 tsp. lemon zest
1/2 tsp. salt
1/8 tsp. ground nutmeg
2 pkg. refrigerated crescent rolls
Directions:
Preheat oven to 375. In a large bowl, flake chicken with a pastry blender. Combine everything except the crescent rolls. Unroll the crescent rolls and place on a round stone as pictured above. It is easiest if you place four crescent rolls at 12, 3, 6, and 9:00 and then place three rolls in between those.

Then scoop the chicken and spinach mixture all the way around the circle.
Fold in the corners of the triangles.

Bake 20-25 minutes or until golden brown. Slice and serve. Yum!

Trena's Chocolate Lava Cake

FALLEN CHOCOLATE CAKE
This comes from Cooks Illustrated. Serves 8 to 10.
One large fallen chocolate cake can be prepared in either a springform pan or a cake pan with a removable bottom. Do not use a regular cake pan, as the cake will be impossible to remove once baked. To melt the chocolate and butter in a microwave oven, heat chocolate alone at 50 % power for 2 minutes; stir chocolate, add butter, and continue heating at 50 % for another 2 minutes, stopping to stir after 1 minute. If chocolate is not yet entirely melted, heat an additional 30 seconds at 50 % power. Though the cake is best when served warm, within about 30 minutes of being unmolded, it can also be held in the pan for up to two hours before serving.

tablespoons unbleached all-purpose flour , plus extra for cake pan

confectioners' sugar or unsweetened cocoa powder for decoration, optional

whipped cream for serving, optional
Instructions
1. Adjust oven rack to center position and heat oven to 375 degrees. Generously butter and flour (or use cocoa powder) 8- or 9-inch springform or removable-bottom cake pan; tap out excess flour and position springform on shallow roasting pan, jelly roll pan, or baking sheet. Meanwhile, melt 8 tablespoons butter and chocolate in medium heatproof bowl set over a pan of almost simmering water, stirring once or twice, until smooth; remove from heat. (Or melt chocolate and butter in microwave oven. See instructions above.)
2.Beat eggs, yolk, vanilla, salt, and sugar at highest speed in bowl of a standing mixer fitted with whisk attachment until volume nearly triples, color is very light, and mixture drops from beaters in a smooth, thick stream, about 5 minutes. (Alternatively, beat for 10 minutes using a hand-held electric mixer and large mixing bowl.) Scrape egg mixture over melted chocolate and butter; sprinkle flour over egg mixture. Gently fold egg and flour into chocolate until mixture is uniformly colored. Ladle or pour batter into springform or cake pan. (Can be covered lightly with plastic wrap and refrigerated up to eight hours. Return to room temperature for 30 minutes before baking.)

3.Bake until cake looks puffed, has a thin crust on top, and jiggle slightly at center when pan is shaken very gently, 22 to 25 minutes for 9-inch pan or 27 to 30 minutes for 8-inch pan. Cool cake for 15 minutes, run a paring knife around inside edges pan to loosen cake, and remove pan sides. Sieve light sprinkling of confectioners' sugar or cocoa powder over cake to decorate, if desired, just before serving, and serve warm with optional whipped cream.
BERRY COULIS
This comes from Cooks Illustrated. Makes 1 1/2 cups.    
Because the type of berries used as well as their ripeness will affect the sweetness of the coulis, the amount of sugar is variable. Start with 5 tablespoons, then add more if you prefer a sweeter coulis. Additional sugar should be stirred in immediately after straining, while the coulis is still warm, so that the sugar will readily dissolve. Serve the coulis with cheesecake, pound cake, ice cream, rich chocolate tortes and cakes, dessert souffles, pancakes, French toast, waffles, or crêpes.

ounces fresh raspberries (or thawed if frozen), or blueberries, blackberries, or strawberries (fresh strawberries hulled and sliced, if using)

Instructions
1.In medium saucepan, bring berries, 1/4 cup water, 5 tablespoons sugar, and salt to bare simmer over medium heat, stirring occasionally; cook until sugar is dissolved and berries are heated through, about 1 minute longer.

2.Transfer mixture to blender or food processor; puree until smooth, about 20 seconds. Strain through fine-mesh strainer into small bowl, pressing and stirring puree with rubber spatula to extract as much seedless puree as possible. Stir in lemon juice and additional sugar, if desired. Cover with plastic wrap and refrigerate until cold, at least 1 hour. Stir to recombine before serving. (If too thick after chilling, add 1 to 2 teaspoons water.) Can be refrigerated in airtight container for up to 4 days.
